  • Parchment paper 
  • Nonstick cooking spray 
  • 3 scoops Vanilla Shakeology 
  • cup/ 30 g almond flour
  • ½ tsp. baking soda
  • ¼ tsp. baking powder
  • ½ tsp. sea salt (or Himalayan salt) 
  • ½ cup / 85 g semisweet (or dark) chocolate chips
  • ¼ cup / 60 ml unsweetened almond milk (or coconut milk beverage)
  • 3 Tbsp. coconut sugar 
  • 2 Tbsp. ghee (organic, grass-fed if possible), melted
  • 1 large egg
  • 1 Tbsp. pure vanilla extract
  1. Preheat oven to 375° F (190 °C). 

  2. Line a baking sheet with parchment paper; lightly coat with spray. Set aside. 

  3. Combine Shakeology, almond flour, baking soda, baking powder, salt, and chocolate chips in a medium bowl; mix well. Set aside. 

  4. Add almond milk, sugar, ghee, egg, and extract to a large bowl; whisk to combine.  

  5. Add dry mixture to wet mixture; mix well until combined. 

  6. Spoon dough in large dollops onto prepared sheet to form 8 cookies.  

  7. Bake for 10 to 15 minutes, or until cookies are barely set. 

  8. Cool on baking sheet for 5 minutes. Serve immediately, or store refrigerated in an airtight container for up to 4 days or frozen for up to 1 month.
